On the search for the best BBQ in Connecticut brings us to Wire Mill Saloon & Barbecue in Redding.

I admit, I was skeptical to check this place out.

I was pretty sure I understood the best BBQ in CT.

I hadn’t heard too much of it.

Just subtle references here and there.

It is wonderful.

There is a smoker right out back that’s constantly going.

We decided to try both the pulled pork and the brisket.

Pulled Pork

The pulled pork was, unfortunately, a little dry.

Not a great start.

The bark was peppery, reminiscent of the Western Carolinas.

The flavor was amazing, however.

There is no question you are eating pork. It comes through deep.

Brisket

Okay.

I had to talk myself down off a ledge.

This brisket is so good, so flavorful.

The smoke flavor is present but not overpowering.

The bark is very sweet, but not like candy or sugar.

Hard to describe.

The meat is tender.

It really doesn’t even need sauce.

As always, ask for it from the fatty end.
