Does Hindsight BBQ in Waterbury have food worth traveling for? Let’s find out.

We went with a whole platter to try their best meats.

Cheeseburger Sausage
The cheeseburger sausage is exceptionally juicy and cheesy, resembling a kielbasa more than a traditional BBQ sausage.
However, it lacks a robust smoky flavor, falling a bit flat in the BBQ department.
The Rating: Cheeseburger Sausage

Brisket
While the lean parts of the brisket are unfortunately dry, the fatty pieces offer a more satisfying experience, provided you specifically ask for them.
The bark on the brisket is notably good, and the BBQ sauce enhances the overall flavor.

Good overall brisket.

The Rating: Brisket

St. Louis Pork Ribs
The ribs stand out as excellent, heavily seasoned with pepper which gives it a bold flavor.
They’re so good that they don’t necessarily need sauce, although the dry rub, which isn’t very sweet, benefits from a bit of sauce for balance.
